Crispy and Delicious Soy Sauce Tofu Gangjeong

This is a recipe for Tofu Gangjeong, a fried dish that’s surprisingly simple to make and perfect as a side for kids. Instead of the common gochujang (red chili paste) sauce, we’ll be making a delicious soy sauce-based Tofu Gangjeong that’s sure to be a hit with everyone. The addition of almond slices adds a wonderful nutty flavor and delightful crunch.

Main Ingredients

  • 1 block Firm Tofu (for pan-frying, approx. 300-350g)
  • 3-4 Tbsp Potato Starch
  • Generous amount of Vegetable Oil (for frying)
  • 1 handful Sliced Almonds (approx. 10-15g)
  • A pinch of Black Sesame Seeds (for garnish)

Soy Sauce Glaze

  • 2 Tbsp Tonkatsu Sauce
  • 1 Tbsp Ketchup
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Corn Syrup (or Oligosaccharide)

Cooking Instructions

Step 1

First, cut the firm tofu into uniform, bite-sized cubes, about 2-3 cm in size. Avoid cutting them too thinly, as they might break apart during frying.

Place the cut tofu pieces on a layer of paper towels. Cover the tofu with another layer of paper towels and gently press down to absorb as much moisture as possible. Removing excess water is crucial for achieving a crispy texture. Let it sit for about 10 minutes.

Once the tofu is drained, evenly coat each piece with 3-4 tablespoons of potato starch. You can gently shake the pieces or lightly rub them with your hands to ensure the starch adheres well. Heat a generous amount of vegetable oil in a pan over medium heat. Carefully add the starch-coated tofu pieces and pan-fry them until golden brown and crispy. This will take about 5-7 minutes. Flip the pieces occasionally to ensure even browning and crisping.

In a separate small pan or pot, combine all the ingredients for the soy sauce glaze: tonkatsu sauce, ketchup, soy sauce, and corn syrup (or oligosaccharide). Bring the mixture to a gentle simmer over medium-low heat. Once it starts to bubble, reduce the heat to low and let it simmer for 1-2 minutes until it thickens slightly.

Add the fried tofu pieces to the simmering soy sauce glaze and toss quickly over low heat to coat each piece evenly. Be careful not to overcook, as the sauce might burn. Stir in the pre-prepared sliced almonds and toss for another moment. Finally, sprinkle with black sesame seeds for a beautiful garnish and a delightful nutty aroma.
