Main Ingredients
- 1/2 head Spring Napa Cabbage (Bomdong)
- 1 Tbsp Toasted Sesame Seeds
Bomdong Geotjeori Dressing
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Maesil Cheong (Plum Extract)
- 1 Tbsp Guk-ganjang (Soup Soy Sauce)
- 1 Tbsp Yangjo Ganjang (Brewed Soy Sauce)
- 1 Tbsp Minced Garlic
- 3 Tbsp Chopped Green Onion
- 1 Tbsp Fish Sauce (Anchovy)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Maesil Cheong (Plum Extract)
- 1 Tbsp Guk-ganjang (Soup Soy Sauce)
- 1 Tbsp Yangjo Ganjang (Brewed Soy Sauce)
- 1 Tbsp Minced Garlic
- 3 Tbsp Chopped Green Onion
- 1 Tbsp Fish Sauce (Anchovy)
Cooking Instructions
Step 1
Carefully wash the Bomdong under running water. Turn it upside down and trim the base slightly to easily separate the leaves. After detaching each leaf, rinse them again thoroughly and drain any excess water. Cut the cabbage into bite-sized pieces, about 4-5 cm long, first lengthwise and then crosswise into thirds. Avoid cutting them too small, as this can reduce the satisfying crunch.
Step 2
In a bowl, combine all the dressing ingredients for the Bomdong Geotjeori. Mix well until the gochugaru is dissolved and the dressing is smooth. The ingredients include gochugaru, sugar, plum extract, soup soy sauce, brewed soy sauce, minced garlic, chopped green onion, and fish sauce. Pre-mixing the dressing ensures the flavors meld beautifully.
Step 3
Add the prepared Bomdong to the bowl with the dressing. Gently toss the cabbage with your hands, ensuring each leaf is evenly coated with the dressing. It’s important not to overmix or toss for too long, as this can make the cabbage soggy. A quick toss is key to preserving its crisp texture.
Step 4
Your delicious Bomdong Geotjeori is ready! For the best flavor and texture, toss it just before serving. It’s incredibly satisfying served alongside warm, freshly cooked rice. This refreshing salad is a perfect accompaniment to rich dishes like grilled pork belly or ham, helping to cut through the richness and awaken your palate. It’s also delightful mixed into rice with other seasoned vegetables like bean sprouts. Enjoy! 😀
