Main Ingredients- 500g bean sprouts
- 100ml water
Seasonings & Others- 1 anchovy/kelp stock cube (crushed into powder)
- 2 Tbsp chili powder (gochugaru)
- 1 Tbsp soy sauce for soup (guk-ganjang)
- 1/2 Tbsp fish sauce (tuna extract)
- A pinch of salt (or to taste)
- A sprinkle of toasted sesame seeds (for garnish)
- 1 anchovy/kelp stock cube (crushed into powder)

- 1 Tbsp soy sauce for soup (guk-ganjang)

Cooking Instructions
Step 1
First, thoroughly wash the bean sprouts under running water. Place the washed bean sprouts in a wide pot. Add 100ml of water and the crushed anchovy/kelp stock cube. Cover the pot tightly with a lid and bring to a boil over high heat. Once boiling, reduce the heat to medium and steam the bean sprouts for about 5 minutes. This steaming process removes any unpleasant odor and creates a clean, umami-rich broth that enhances the flavor of the stir-fry.
Step 2
Once the bean sprouts are cooked to your liking, carefully lift the lid. Turn the heat down to very low. Add 2 Tbsp of chili powder, 1/2 Tbsp of fish sauce, and 1 Tbsp of soy sauce for soup one by one. Gently toss the ingredients together, being careful not to mash the bean sprouts, until the seasonings are evenly distributed. It’s crucial to cook over low heat to prevent the seasonings from burning.
Step 3
After the seasonings have well combined with the bean sprouts, taste the mixture. Adjust the saltiness with a pinch of salt (or to your preference). If you like a touch of sweetness, feel free to add a little sugar or corn syrup at this stage. Always taste and adjust the final seasoning to your liking.
Step 4
Transfer the finished stir-fried bean sprouts to a serving dish, arranging them appealingly. Finally, sprinkle generously with toasted sesame seeds for an extra nutty aroma and visual appeal.
