Main Ingredients- 500g bean sprouts
- 1 Tbsp minced garlic
- 1/4 green onion (or scallions/chives)
- 2/3 Tbsp red pepper flakes
- 1/3 Tbsp salt
- 1/2 Tbsp fish sauce (or a little soy sauce/seasoning)
- 1 Tbsp perilla oil
- 100ml water
Cooking Instructions
Step 1
First, rinse the fresh bean sprouts thoroughly under running water a couple of times. This step is crucial for removing any potential ‘earthy’ smell from the bean sprouts, so wash them meticulously.
Step 2
Prepare a pot or pan with some depth and add all the washed bean sprouts. Avoid packing them too tightly so they have room to steam.
Step 3
To the pot with the bean sprouts, add the minced garlic and chopped green onions. If you don’t have green onions, feel free to use scallions or chives for a different aromatic touch.
Step 4
Now it’s time to add the seasonings. Add the red pepper flakes, salt for seasoning, fish sauce (or you can substitute with soy sauce or a general seasoning), and perilla oil for a nutty aroma. Finally, pour in 100ml of water to ensure they cook moistly.
Step 5
Once all ingredients and seasonings are in the pot, cover with a lid. Start cooking over medium-high heat. It’s important not to lift the lid until steam begins to rise. This allows the bean sprouts to release their natural moisture and cook evenly.
Step 6
When you see steam rising and hear the ‘bubbling’ sound inside the pot, wait for another 2-3 minutes. The bean sprouts will be partially cooked. After this time, lift the lid and gently stir the bean sprouts and seasonings together with a spatula until well combined.
Step 7
Taste a little bit of the seasoned broth from the bean sprouts and adjust the saltiness to your preference. If it’s too bland, add a tiny bit more salt. If it’s too salty, add a little more water. Once the seasoning is adjusted, cover the pot again and reduce the heat to low. Let it simmer gently for another 3-4 minutes, allowing the flavors to meld into the bean sprouts.
Step 8
Transfer the deliciously prepared stir-fried bean sprouts to a serving dish. This makes a wonderful side dish for any meal. Enjoy it with a bowl of warm rice!
