Slightly crispy with a chewy texture, stir-fried dried filefish (gwipo) is a universally loved beer snack and a fantastic side dish. I had some leftover gwipo from a 1+1 sale at the supermarket, so I decided to make this simple yet delicious side dish. This gwipo stir-fry recipe is perfect for special occasions or just to enjoy with a cold beer on any ordinary day. Let’s get started!
Main Ingredients- 3 sheets of dried filefish (gwipo)
- 2 Korean green chili peppers (cheongyang peppers)
Seasoning Ingredients- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp cooking wine (mirin or similar)
- 1/2 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp sesame oil
- A pinch of toasted sesame seeds
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp cooking wine (mirin or similar)
- 1/2 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp sesame oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, cut the dried filefish into bite-sized pieces, about 1-2 cm wide, using scissors for a neat finish. Avoid cutting them too thinly, as they can break easily. Aim for a moderate thickness.
Step 2
Wash the Korean green chili peppers, remove the stems, and finely chop them to add a spicy kick. If you enjoy heat, you can leave the seeds in.
Step 3
Heat 1-2 tablespoons of cooking oil in a frying pan over medium-low heat. Add the prepared dried filefish strips and stir-fry until lightly golden brown, being careful not to burn them. Cook until the moisture evaporates and they become slightly crispy.
Step 4
In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp cooking wine, 1/2 Tbsp minced garlic, 1 Tbsp plum extract, and 1 Tbsp red pepper flakes. Mix well with chopsticks to create the delicious seasoning for the gwipo stir-fry. You can adjust the seasoning ratios to your preference.
Step 5
Pour the prepared seasoning into the pan where you stir-fried the gwipo. Over medium heat (avoid high heat), once the sauce begins to bubble, add the stir-fried gwipo strips. Stir-fry quickly to ensure the sauce coats the gwipo evenly. Be careful not to burn the sauce.
Step 6
Once the gwipo and sauce are well combined, add the chopped Korean green chili peppers and stir-fry briefly. The crisp texture and spiciness of the chili peppers will enhance the overall flavor of the gwipo stir-fry.
Step 7
Finally, turn off the heat and drizzle with 1/2 Tbsp sesame oil and sprinkle with toasted sesame seeds for added nutty aroma. Your delicious gwipo stir-fry is ready! It’s great served warm or cooled.
