Main Ingredients

  • 150g dried shredded squid (ojingeo-silchae)
  • 1 Tbsp cooking oil
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp mirin (rice wine for cooking)

Seasoning Ingredients

  • 1.5 Tbsp soy sauce (jin-ganjang)
  • 1 Tbsp plum extract (maesil-aek)
  • 1 tsp fine red chili powder (go-un-gochugaru)

Cooking Instructions

Step 1

First, lightly rinse the dried shredded squid under cold water. This helps remove any residual saltiness and impurities. After rinsing, squeeze out as much water as possible with your hands.

Step 1

Step 2

To the squeezed shredded squid, add 1 Tbsp of mirin (cooking rice wine) and gently knead it with your hands. This step is crucial for effectively removing any fishy odor from the squid.

Step 2

Step 3

Heat 1 Tbsp of cooking oil and 1 Tbsp of minced garlic in a pan over medium-low heat. Once the garlic becomes fragrant, add the prepared shredded squid. Stir-fry over low heat, allowing the moisture to evaporate and the squid to become crispy, similar to instant ramen noodles. Cook slowly until it reaches this texture.

Step 3

Step 4

In a separate small bowl, combine 1.5 Tbsp of soy sauce, 1 Tbsp of plum extract, and 1 tsp of fine red chili powder. Mix well with a spoon to create the seasoning sauce.

Step 4

Step 5

Once the shredded squid is dry and crispy, pour in the prepared seasoning sauce. Continue to stir-fry over low heat, ensuring the sauce coats the squid evenly and seeps into it. It’s important to maintain low heat throughout this stage to prevent the sauce from burning.

Step 5

Step 6

When the seasoning has evenly coated the shredded squid, turn off the heat immediately. Finish by adding 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds, and give it a quick toss.

Step 7

Your delicious stir-fried dried shredded squid, with its wonderfully crispy and chewy texture, is now complete! It makes a fantastic side dish served over warm rice.
