I stir-fried cucumbers with oyster mushrooms! Cucumbers are usually seasoned and served as a side dish, but since my daughter loves mushrooms, I decided to stir-fry them for her. Main Ingredients- 1 cucumber
- 2 handfuls of oyster mushrooms

Cooking Instructions
Step 1
First, wash the cucumber thoroughly. Slice it thinly and lightly salt it to let it pickle for about 10-15 minutes. After pickling, rinse it gently under cold water and squeeze out any excess moisture by hand. This step helps keep the cucumber crisp and prevents it from becoming soggy.
Step 2
Prepare the oyster mushrooms by removing the tough, woody ends. Tear them into bite-sized pieces. Rinse them under running water and gently press out the excess water. Be careful not to squeeze too hard, as this can diminish the mushroom’s flavor.
Step 3
Heat a wok or frying pan over medium heat with grapeseed oil. Add the prepared oyster mushrooms and stir-fry until they begin to release their moisture. Pour in the chicken stock (2 Tbsp) to add a savory depth to the mushrooms. Continue to stir-fry until the mushrooms are lightly browned.
Step 4
Once the mushrooms are partially cooked, add the squeezed cucumber to the wok. Stir-fry quickly over high heat. It’s important not to overcook the cucumber, as it can release water and become soft. Stir-fry for just 1-2 minutes until all ingredients are well combined. Finally, garnish with chopped scallions, black pepper, sesame seeds, and a drizzle of sesame oil for added aroma.
