Main Ingredients

  • 10 frozen store-bought dumplings
  • 7-8 Korean cucumbers (oigochu)

Cooking Instructions

Step 1

First, prepare your store-bought frozen dumplings. Using a microwave to defrost them is quick and convenient. While the dumplings are defrosting, wash the Korean cucumbers thoroughly.

Step 1

Step 2

Once defrosted, remove the dumpling wrappers and separate the filling. You can use any type of dumpling filling you prefer, such as kimchi, meat, or glass noodle dumplings. Keep in mind that kimchi dumplings have a strong flavor, which will influence the overall taste of the stuffed peppers.

Step 2

Step 3

Now, let’s make the delicious batter. Mix frying powder and ice water in a 1:1 ratio. Aim for a consistency that flows smoothly, not too thick. If the batter is too thick, the fried coating will be heavy and greasy, so adjusting the consistency is key.

Step 3

Step 4

Slice the washed Korean cucumbers in half lengthwise.

Step 4

Step 5

Carefully scoop out the seeds from the inside of the halved cucumbers using a spoon or teaspoon. Lightly dust the inside of the hollowed-out cucumber with frying powder; this will help the dumpling filling adhere better.

Step 5

Step 6

Fill the hollowed space of each cucumber with the prepared dumpling filling. Press the filling firmly to ensure it stays in place during frying.

Step 6

Step 7

Once the filling is in place, lightly coat the outside of the stuffed cucumber with more frying powder. Then, dip the stuffed cucumber into the prepared batter, ensuring it’s evenly coated. Shake off any excess batter.

Step 7

Step 8

Now it’s time to fry. Check that the cooking oil is at the right temperature (medium heat). Carefully place the battered stuffed chili peppers into the hot oil, one by one. Avoid overcrowding the pan. Fry until golden brown and crispy on all sides.

Step 8

Step 9

Once the fried chili peppers are golden and crispy, remove them from the oil and place them on a wire rack or paper towels to drain excess oil. Your simple and delicious stuffed chili peppers are now ready! They are best enjoyed while warm.
