Crispy and Delicious Super Simple Buchujeon (Green Onion Pancake)

I tried making my husband’s favorite Buchujeon with a super simple recipe! It’s crispy on the outside and tender on the inside, perfect for special occasions, a quick snack, or even an appetizer. Feel free to add any leftover vegetables from your fridge!

Main Ingredients

  • 1 bunch fresh green onions (about 100g)
  • 1 handful dried shrimp (adjust to your preference)

Batter & Seasoning

  • 1 cup pancake mix (about 120g)
  • 1 cup cold water (about 200ml)
  • 1 egg
  • 1 Tbsp anchovy sauce (can be substituted with soy sauce or salt)

Cooking Instructions

First, prepare all the ingredients needed for the Buchujeon. Wash the green onions thoroughly, drain them, and cut them into bite-sized pieces, about 3-4cm long. If using dried shrimp, remove any debris.

In a bowl, add 1 cup of pancake mix and crack in 1 egg. Then, pour in 1 cup of cold water and mix with a whisk or chopsticks until smooth and lump-free. Avoid overmixing, as this can make the pancake chewy. Mix just until the flour is incorporated. The batter should have a pourable consistency.

Add the prepared green onions and dried shrimp to the batter. Gently mix with a spatula or chopsticks, being careful not to mash the green onions, until the ingredients are well combined with the batter.

Finally, stir in 1 Tbsp of anchovy sauce for a savory flavor boost. You can use soy sauce or salt as a substitute, but anchovy sauce adds a deeper, richer taste. Mix gently to combine everything.

Heat a generous amount of cooking oil in a pan over medium-low heat. Ladle the batter into the pan, spreading it thinly. Cook until the bottom is golden brown and crispy, then flip and cook the other side until golden and cooked through.
