Step 1
First, prepare the fresh cucumbers. Gently scrape off the hard ridges on the cucumber’s surface with the back of a knife, then rinse them thoroughly under running water.

Slice the cucumber into thin pieces, about 2mm thick. Slicing them too thick can prevent the seasoning from absorbing well, while slicing them too thin can reduce their crispiness, so achieving the right thickness is key.

In a large bowl, combine 1 Tbsp red pepper flakes, 1 Tbsp red pepper paste, 1 Tbsp plum extract, 1 Tbsp anchovy sauce, and 1 Tbsp minced garlic.
