Main Ingredients
  • 1/2 medium radish (approx. 500g)

Seasoning Ingredients
  • 2 Tbsp fish sauce
  • 1 tsp coarse salt (or 1/2 tsp fine salt)
  • 1 tsp sugar
  • 1 tsp minced garlic
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp toasted sesame seeds or sesame seeds

Cooking Instructions

Step 1

First, prepare half of a medium radish. It’s best to choose a radish that is fresh and firm.

Step 2

Wash the radish thoroughly and peel its skin. Then, thinly julienne it into strips about 5-7 cm long. If slicing by hand feels tedious, using a mandoline slicer will make it faster and more uniform. Cutting the radish thinly helps the seasoning penetrate well and improves the texture.

Step 3

Transfer all the julienned radish into a large bowl. Now it’s time to add the seasonings to make this delicious radish salad.

Step 4

Add the prepared seasoning ingredients in order: 1 Tbsp gochugaru, 2 Tbsp fish sauce, 1 tsp coarse salt, 1 tsp sugar, 1 tsp sesame seeds, and 1 tsp minced garlic. Gently mix everything together with your hands, as if gently massaging the ingredients (jo-mul jo-mul). Be careful not to mix too vigorously, as this can release too much liquid from the radish.

Step 5

Once the radish and seasonings are well combined, taste it. If it’s too bland, add a little more salt to adjust the seasoning. When the flavor is just right, your crispy and delicious super simple radish salad is ready! It’s great to eat right away, or you can let it sit for a short while to let the flavors meld for an even richer taste.
