First, after preparing the yellowtail head by cleaning it, soak it in cold water for about 30 minutes. This step is crucial for drawing out any blood, which helps to eliminate any fishy odor and ensures a clean, pure flavor in the final dish.

Once the blood has been drained, carefully pat the yellowtail head dry with paper towels. Removing excess moisture is key to achieving a wonderfully crispy skin when air frying; otherwise, the skin might turn out soggy.

Now, let’s get ready for the air fryer! Place the prepared yellowtail head into the air fryer basket. Brush both sides evenly with 2 tablespoons of cooking oil. This oil coating will help the skin become extra crispy and enhance the overall flavor. Without preheating, set the air fryer to 180Β°C (356Β°F) and cook for 10 minutes on the first side, then flip and cook for another 10 minutes on the second side, for a total of 20 minutes.
