Ingredients
  • 500g Chicken Thigh Meat (skin-on recommended for extra crispiness)
  • 3 Tbsp Olive Oil
  • 1 Tbsp Cooking Wine (Mirin or Sake)
  • 1 Tbsp Minced Garlic
  • Pinch of Salt
  • Pinch of Black Pepper
  • Pinch of Ginger Powder (or fresh ginger juice)
  • Pinch of Basil Powder (or fresh basil)

Cooking Instructions

Step 1

First, rinse the chicken thigh meat and pat it thoroughly dry. Place the chicken on a cutting board and sprinkle evenly with 1 Tbsp of cooking wine (or mirin) and a pinch of salt. Gently press the seasonings into the meat.

Step 2

Next, sprinkle black pepper, ginger powder, and basil powder evenly over one side of the chicken. Lightly rub the spices onto the surface to help them adhere.

Step 3

Flip the chicken over and repeat the seasoning process on the other side. Ensure the spices are distributed evenly across all surfaces.

Step 4

Turn the chicken back over. Generously spread 1 Tbsp of minced garlic all over the meat. Drizzle 3 Tbsp of olive oil over the entire piece of chicken to coat it lightly. Cover with plastic wrap or place in an airtight container and marinate in the refrigerator for at least 30 minutes. A longer marination time will result in more tender and flavorful chicken.

Step 5

Heat a skillet over medium-high heat. Place the marinated chicken, meat-side down first, and sear for 2-3 minutes until golden brown. If using skin-on chicken, start with the skin side down to achieve maximum crispiness. Sear both sides until nicely browned.

Step 6

Flip the chicken and continue to sear the other side over medium-high heat until golden brown. Once both sides are nicely seared, reduce the heat to low. Cover the skillet and let it cook for another 5-7 minutes, or until the chicken is cooked through and juicy. Turning it once or twice during this low-heat cooking will ensure even cooking.
