Scone Dough Ingredients

  • 220g cake flour (sifted)
  • 100g cold unsalted butter (cut into small cubes)
  • 85ml cold milk
  • 45g toasted almonds (roughly chopped)
  • 2 Tbsp sugar (approx. 30g)
  • 1 tsp salt (approx. 5g)
  • 1 tsp baking powder (approx. 4g)

In a food processor, combine the sifted cake flour, baking powder, cold cubed butter, sugar, and salt. Pulse for about 20 seconds until the mixture resembles coarse crumbs. This process coats the flour with butter, creating a tender crumb. Next, pour in the cold milk and pulse just until the dough begins to come together into a cohesive ball. Be careful not to overmix, as this can develop gluten and result in tough scones.

Turn the dough out onto a lightly floured surface and gently incorporate the roughly chopped toasted almonds. Mix them in using a spatula or your hands until evenly distributed. Form the dough into a rough ball, wrap it tightly in plastic wrap or place it in a plastic bag, and refrigerate for at least 30 minutes. Chilling the dough makes it easier to handle and shape, and also helps to develop a better texture and flavor in the finished scones.
