When you’re enjoying rich, fatty meats, a refreshing and tangy chive salad (Buchu Muchim) is the perfect accompaniment that cuts through the richness and awakens your palate! It’s like a dream team partner that allows you to endlessly indulge in meat. While you can add carrots or onions based on what’s in your fridge, today I’ll show you how to make a wonderfully simple and delicious chive salad using just fresh chives. Ingredients- 100g fresh chives
- 2.5 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp soy sauce
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1/2 Tbsp maesil cheong (plum syrup, adjust sweetness)
- 1/2 Tbsp sugar
- 1 Tbsp vinegar
- 1/2 Tbsp sesame oil
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
To bring out the best flavor of the fresh chives, it’s important to first remove any dirt or dust. Place the chives in a bowl, add enough water to cover them, and let them soak for about 5 minutes. Then, rinse them thoroughly under running water and gently shake off the excess moisture.
Step 2
After draining, cut the chives into about 5cm (2-inch) lengths for easy eating. If they’re too long, the seasoning won’t penetrate well, and if they’re too short, the texture might be less appealing, so 5cm is just right. For thicker stems, you can halve them lengthwise to help the dressing soak in better.
Step 3
Now, add all the dressing ingredients (gochugaru, soy sauce, fish sauce, maesil cheong, sugar, vinegar) to the cut chives. To preserve the chives’ crispiness, avoid mashing them vigorously. Instead, gently toss them with your fingertips until evenly coated. The key is to keep them delightfully crunchy!
Step 4
Finally, drizzle in the 1/2 Tbsp of sesame oil for a nutty aroma and sprinkle a pinch of sesame seeds for both visual appeal and flavor. Toss lightly one last time.
