Begin by preparing your fresh mung bean sprouts. Gently rinse them under running water to remove any dirt or debris, and lightly pat them dry. Be careful not to wash them too vigorously, as they can easily become mushy.

Bring a pot of water to a rolling boil over high heat. Once boiling, add a pinch of salt, and then carefully add the prepared mung bean sprouts. Blanch them for a very short time, about 30 seconds to 1 minute at most. Overcooking will make them lose their crispness, so the key is to blanch them quickly until they just begin to wilt.

Immediately after blanching, drain the sprouts and rinse them thoroughly under cold running water. This shock in cold water stops the cooking process and helps maintain their crisp texture. Squeeze out as much water as possible before transferring them to a bowl. Excess water can dilute the seasoning.
