This is a fantastic side dish for the hot summer when your appetite might be low! I’m introducing a Cucumber and Pickled Cucumber Salad known for its wonderfully crisp texture and sweet and tangy seasoning. It’s easy to make and perfect as a side for rice, or you can mix it with meat for a satisfying meal. Your whole family will love this flavor, so be sure to try it!
Main Ingredients- 2 Cucumbers (or Pickled Cucumbers)
- 1 Onion
Cooking Instructions
Step 1
1. Wash the fresh cucumbers (or pickled cucumbers) thoroughly under running water. You can lightly peel the skin with a knife or peeler. Then, cut them in half lengthwise and scoop out the seeds. Finally, slice them into 5cm (about 2-inch) long strips for easy eating.
Step 2
2. Sprinkle 1 tablespoon of coarse sea salt evenly over the sliced cucumbers. This process helps to draw out excess moisture, enhancing their crispiness. Let them sit for about 5 minutes to soften slightly.
Step 3
3. Gently rinse the slightly wilted cucumbers under cold water to remove excess saltiness. Drain them thoroughly in a colander, ensuring as much water as possible is removed. This step is crucial for achieving the best texture. Thinly slice the onion.
Step 4
4. Add the sliced onion to the drained cucumbers. Now, add all the prepared seasoning ingredients (minced garlic, gochujang, sesame oil, toasted sesame seeds, plum extract). Gently mix and toss everything together with your hands until the seasoning is evenly distributed. Be careful not to mix too vigorously, as it might affect the fresh flavor.
Step 5
5. Serve the finished Cucumber and Pickled Cucumber Salad attractively on a plate. Place a generous amount of the salad over your rice, and mix it with stir-fried meat or other side dishes for an incredibly delicious meal! You’ll be amazed at how quickly a bowl of rice disappears. Everyone should give this a try!
