Cooking Instructions
Step 1
First, prepare two medium-sized potatoes. Since we’ll be cooking them with the skin on, scrub them thoroughly using baking soda or coarse salt to ensure they are clean. Once washed, cut each potato into 8 wedges, about 1 cm thick, to create bite-sized pieces. It’s important to maintain a moderate thickness; too thin and they might break apart.
Step 2
Place the cut potato wedges in a bowl of cold water and let them soak for about 10 minutes. This step helps to remove excess starch from the surface, which contributes to crispier wedges and prevents them from sticking together. After soaking, drain the potatoes thoroughly in a colander.

Use paper towels to pat the potato wedges completely dry. Any remaining moisture can prevent the seasonings from adhering properly and result in soggy wedges. Once dry, transfer the potatoes to a large bowl or a resealable plastic bag.
