Main Ingredients- Anchovies 150g (small ones for stir-frying or larger ones for broth)
- Sliced Almonds 100g
Seasoning Ingredients- Cooking Oil 1 Tbsp (or oil for toasting nuts)
- Soy Sauce for Seasoning (Guk-ganjang or Jin-ganjang) 2 Tbsp
- Sugar 2 Tbsp
- Oligosaccharide Syrup 2 Tbsp
- Sesame Seeds, a pinch
- Sesame Oil, a pinch
- Cooking Oil 1 Tbsp (or oil for toasting nuts)

Cooking Instructions
Step 1
First, prepare the anchovies and sliced almonds. Using small anchovies (‘jan-myeolchi’) is recommended as they hold their shape better during stir-frying and blend well with the almonds. If using larger anchovies (‘gukmul-yong myeolchi’) meant for broth, be sure to remove their guts. Sliced almonds are convenient for stir-frying. Prepare about 150g of anchovies and 100g of sliced almonds.
Step 2
To enhance the savory flavor of the anchovies and almonds and to remove any fishy smell, lightly toast them in an oven or a dry pan. Bake them in a preheated oven at 150°C (300°F) for about 5-7 minutes, or toast them in a dry pan over medium-low heat, stirring constantly to prevent burning, for 2-3 minutes. Toasting them like this softens the anchovies slightly and makes the almonds extra crispy.
Step 3
Combine the toasted anchovies and almonds in a bowl. Having them mixed and ready will make it easier to coat them evenly with the sauce in the next step.
Step 4
Now, let’s make the delicious seasoning sauce. In a small bowl, combine 1 Tbsp of cooking oil, 2 Tbsp of soy sauce for seasoning, 2 Tbsp of sugar, and 2 Tbsp of oligosaccharide syrup. Stir well until the sugar is dissolved. You can adjust the sweetness to your preference, and using oligosaccharide syrup will add a nice glossy finish.
Step 5
Heat a pan over medium-low heat and add the prepared sauce. Once the sauce begins to simmer, add the anchovies and almonds. Stir quickly to coat them evenly with the sauce, cooking for about 1-2 minutes. Turn off the heat, then drizzle in a pinch of sesame seeds and a pinch of sesame oil for an extra nutty aroma.
