Buchujeon Ingredients- 2.5 cups all-purpose flour (approx. 300g)
- 1 cup water (approx. 200ml)
- 1 potato (medium-sized)
- 1 tsp coarse salt
- 4 handfuls chopped chives (approx. 120g)
- 1 small onion
- Seafood (shrimp, squid, etc., as preferred)
Cooking Instructions
Step 1
First, prepare the base of your batter by placing 2.5 cups (about 300g) of all-purpose flour into a large bowl.
Step 2
Wash and peel the medium-sized potato thoroughly. Then, grate it finely using a grater. Adding mashed potato is a secret tip that makes the pancake extra soft and moist.
Step 3
Add the grated potato directly into the flour mixture without squeezing out the liquid. The natural moisture from the potato will help achieve the right batter consistency.
Step 4
Stir in 1 teaspoon of coarse salt. Salt not only seasons the batter but also enhances the overall flavor of the chive pancake. Mix everything well with a spatula or chopsticks until combined.

Now it’s time to make the batter by adding 1 cup (about 200ml) of water. However, the amount of water can vary depending on the type of flour and humidity, so adjust the water gradually while checking the batter’s consistency. Aim for a consistency that’s neither too thin nor too thick, allowing it to spread thinly on the pan.

Add about 4 handfuls (approximately 120g) of neatly chopped chives to the batter. The fresh aroma and crisp texture of the chives are key to a great Buchujeon.

Finely shred half of a small onion and add it to the batter. The natural sweetness of the onion will add depth to the flavor of the chive pancake.
