First, to remove any fishy odor and make the anchovies crispier, toast them in a dry pan without any oil over medium-low heat. This process helps eliminate any residual moisture or smell from frozen anchovies, ensuring a fresh start to your cooking. Stir-fry until the anchovies become dry and slightly crispy. Then, sift them through a fine-mesh sieve to remove any powder. This step contributes to a cleaner final dish.

After sifting, you’ll notice anchovy powder will be separated. To ensure a clean cooking surface for the next step, wipe the inside of the pan with a paper towel. Removing any residue will make the subsequent cooking process more effective.

Next, roast the cashew nuts in the same dry pan, similar to the anchovies. This step enhances their natural nutty flavor and effectively removes any unwanted smells from storage, leaving only their pleasant aroma. Be careful not to burn them; just toast them lightly.

It’s highly beneficial to prepare the seasoning mix in advance. This ensures the flavors are evenly distributed throughout the dish, resulting in a more delicious stir-fry. In a small bowl, combine 1 Tbsp cooking oil, 2 Tbsp soy sauce, 1 Tbsp cooking wine, 2 Tbsp oligosaccharide, 1 tsp minced garlic, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Mix them well to create the seasoning sauce. The oligosaccharide adds a glossy finish and helps prevent the anchovies from becoming too hard.

Now, pour the prepared seasoning sauce into the pan and bring it to a gentle boil over medium heat. As soon as it starts to bubble, turn off the heat immediately. Boiling the sauce first helps it coat the anchovies and cashews more effectively and significantly reduces the risk of the sauce burning during the stir-frying process. With the heat off, add the toasted anchovies and cashew nuts to the pan. Toss them well to ensure they are evenly coated with the sauce. Once everything is well combined, turn the heat back on to low and stir-fry for just 1 minute. This brief cooking time helps the sauce cling to the ingredients without burning. Turning off the heat to mix and then briefly reheating ensures a perfectly seasoned and delicious stir-fry.
