These chive and potato pancakes, pan-fried until golden brown and sizzling, are a savory and nutritious snack that everyone will love. They’re simple yet make for a wonderful treat or a perfect accompaniment to Korean rice wine (makgeolli)!
Main Ingredients- 270g Potatoes (about 2 medium)
- 1/4 Onion (small)
- 30g Chives (about 1 handful)
- Plenty of Cooking Oil
Seasoning- 1/4 tsp Salt
- 1/4 tsp Salt
Cooking Instructions
Step 1
First, peel and thoroughly wash the 270g of potatoes, then cut them into bite-sized pieces. Peel and roughly chop the 1/4 onion into similar-sized pieces. Place the chopped potatoes and onion into a blender and blend until smooth. If the mixture seems too thick, you can add a tiny splash of water.
Step 2
Transfer the blended potato mixture into a bowl. Wash the 30g of chives, then finely chop them into about 1-2 cm lengths and add them to the potato mixture. Add 1/4 teaspoon of salt and mix everything well. The fragrant chives and creamy potatoes will create a delicious batter.
Step 3
Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the pan is hot, scoop about one ladleful of the potato batter and spread it out into a round, flat pancake. As the edges begin to turn golden brown, adjust the heat to prevent burning and cook until the center is done. When the bottom side is fully cooked and firm, and the edges are crispy, carefully flip the pancake with a spatula and cook the other side until golden brown. Once both sides are a beautiful golden color, they are ready to serve!
