- Pinch of black pepper
- 1 Tbsp Soy sauce
- 1 Tbsp Vinegar
- 1 Tbsp Oligosaccharide
- 1 Tbsp Olive oil
Cooking Instructions
Step 1
First, prepare the enoki mushrooms. Trim off the root end and rinse them lightly under running water, then pat them dry. Cut them into approximately 2cm lengths. Using scissors will make this process neat and easy.
Step 2
Place the cut enoki mushrooms in a bowl. Add 1 tablespoon of all-purpose flour and 1 tablespoon of pancake mix. Toss gently to coat the mushrooms evenly. This step helps the ingredients stick together, ensuring the pancake holds its shape while cooking.
Step 3
Wash the scallions and chop them into approximately 2cm pieces. Lightly season the chopped scallions with salt and pepper. In a separate bowl, crack and whisk the 2 eggs until well combined.
Step 4
Heat 1 tablespoon of olive oil in a non-stick pan over medium-low heat. Ensure the pan is adequately preheated before adding the batter; this will help create a crispy texture. Avoid using too much oil, as it can make the pancake greasy.
Step 5
Using a ladle or spoon, scoop portions of the enoki mushroom mixture and place them in the heated pan. Gently spread each portion into a round pancake shape. Cook until both sides are golden brown and crispy, taking care to give them enough time to cook through. Adjusting the heat is key for perfect results.
Step 6
Once perfectly cooked, transfer the enoki mushroom pancakes to a plate. For the dipping sauce, simply mix 1 tablespoon of soy sauce, 1 tablespoon of vinegar, and 1 tablespoon of oligosaccharide. Serve warm with the dipping sauce for a delicious, crispy, and savory experience.
