Main Ingredients
  • Unseasoned dried shredded squid (Jinjimchae) 1 handful (measured by lightly cupping in one hand)
  • Seasoned dried shredded squid (Jinjimchae) 1 handful (measured by lightly cupping in one hand)
  • Vegetable oil, ample amount (for frying, approx. 1 bottle of 3.6L)
  • Dry frying powder (for dusting) 4 Tbsp
  • Frying powder 1 cup
  • Ice-cold water (total) 1 cup
  • Egg yolk 1

Cooking Instructions

Step 1

First, prepare the unseasoned dried shredded squid. A good measure is what you can lightly cup in one hand. Submerge the squid in enough water to cover it and let it soak for about 10 minutes. After soaking, thoroughly pat it dry with paper towels to prevent oil splattering during frying.

Step 2

Coat the dried, unseasoned squid with the dry frying powder for dusting. Lightly shake off any excess to ensure the coating adheres well.

Step 3

Pour a generous amount of vegetable oil into a deep pan or pot, and preheat it to about 170-180°C (340-350°F). Carefully add the dusted unseasoned squid to the hot oil and fry for a short 30-40 seconds. This initial fry slightly cooks the squid and gives it an initial crispness.

Step 4

Now, prepare the seasoned dried shredded squid. Just like before, evenly coat the seasoned squid with the dry frying powder for dusting. Handle gently as the seasoning might make it more delicate.

Step 5

Let’s make a delicious batter! In a bowl, combine 1 cup of frying powder, 1 egg yolk, and 1 cup of ice-cold water mixed with ice cubes. Tip: For an extra crispy coating, sift the frying powder twice before using. Adding ice keeps the batter cold, which is key for crispiness.

Step 6

Dip the dusted seasoned squid into the prepared batter, ensuring it’s evenly coated. Then, carefully place the battered squid into the preheated oil. Fry until the batter turns golden brown. This should only take a short time; over-frying can make it tough.

Step 7

Voila! Your crispy on the outside, chewy on the inside, two-style dried shredded squid fritters are ready. They are best enjoyed immediately while warm. Pair them with a cold beer or your favorite beverage for a perfect treat!
