Ingredients- 100g lotus root
- 200ml cooking oil
Cooking Instructions
Step 1
First, prepare the thoroughly washed lotus root. About 100g is a good amount. Gently peel the skin of the lotus root using a peeler, then rinse it clean under running water. Afterward, slice it into round shapes about 0.5cm thick. Taking care with this step will help create nicely shaped fritters.
Step 2
Soak the sliced lotus root in a vinegar water solution for about 10 minutes. This vinegar soak prevents the lotus root from browning and helps remove its characteristic astringency, resulting in a cleaner, crisper texture. Mix about 1 tablespoon of vinegar with 1 cup of water for the solution.
Step 3
Remove the lotus root from the vinegar water and rinse it thoroughly under cold running water. It is crucial to meticulously pat the lotus root dry with paper towels or a clean kitchen towel after rinsing. Excess moisture can cause dangerous oil splattering and prevent the fritters from becoming crispy.
Step 4
Pour about 200ml of cooking oil into a frying pan and heat it over medium heat. If the oil temperature is too low, the fritters will absorb too much oil and become soggy. If it’s too high, the outside might burn while the inside remains undercooked. Maintaining the right temperature is key. Once the oil is hot enough, carefully add the dried lotus root slices and fry until they are golden brown and crispy. Flip them occasionally to ensure even cooking. Once done, place the fried lotus root on paper towels to absorb any excess oil for an even crispier finish.
