Ingredients- 1 potato (about the size of a man’s fist)
- 1/4 onion
- 1 egg
- 1 pinch of salt
- 1/2 Tbsp curry powder

First, prepare the potatoes. Peel one potato, roughly the size of a man’s fist, and julienne it as thinly and finely as possible. The texture of your pancake will depend on how finely you cut the potatoes, so try to cut them evenly.

Rinse the julienned potatoes under cold running water to remove excess starch. This step is key to achieving a crispy pancake. If you prefer a softer texture, you can skip this rinsing step and use the potatoes directly.

In a large bowl, combine the drained potato shreds and thinly sliced onion. (Tip: Onion adds a wonderful depth of flavor and a hint of sweetness to the potato pancake.
