Crispy and Savory Stir-Fried Anchovies
The Ultimate Side Dish! How to Make Crispy Stir-Fried Anchovies
Let’s make a staple side dish, stir-fried anchovies, that’s both crispy and irresistibly savory. Perfect for any meal!
Main Ingredients- Dried anchovies (small) 50g (approx. 1 paper cup)
- Mixed nuts 50g (your choice)
- Sugar 1 Tbsp
Seasoning- Sesame oil 2 Tbsp
- Oligosaccharide (corn syrup) 2 Tbsp (1 Tbsp rice oligosaccharide + 1 Tbsp cooking oligosaccharide)
- Sesame oil 2 Tbsp
- Oligosaccharide (corn syrup) 2 Tbsp (1 Tbsp rice oligosaccharide + 1 Tbsp cooking oligosaccharide)
Cooking Instructions
Step 1
First, prepare about 50g of small dried anchovies, which is roughly one paper cup’s worth. Heat a frying pan over medium-low heat. Add the anchovies and stir-fry them until they become crispy, being careful not to burn them. This process removes any fishy odor and enhances their nutty flavor and crispiness.
Step 2
Once the anchovies are somewhat crispy, reduce the heat to very low. Add 2 tablespoons of sesame oil and 1 tablespoon of sugar. Stir gently over low heat until the sugar dissolves and coats the anchovies. It’s crucial to maintain a low heat setting to prevent the sugar from burning.
Step 3
You can use your preferred type of nuts. If the nuts are too large, they might be difficult to chew. Break them into smaller pieces. Walnuts, almonds, and peanuts all pair wonderfully with anchovies.
Step 4
Add the prepared, crushed nuts to the pan with the anchovies and stir gently. Stirring the nuts together with the anchovies adds a richer nutty taste and a more satisfying texture.
Step 5
Finally, add 2 tablespoons of oligosaccharide (you can use a mix of 1 Tbsp rice oligosaccharide and 1 Tbsp cooking oligosaccharide, or substitute with corn syrup or grain syrup). Stir quickly to coat the anchovies and nuts evenly with the glaze, ensuring they get a glossy finish and the sauce is well absorbed. This completes your delicious and crispy stir-fried anchovies!
