These stir-fried anchovies are packed with garlicky aroma and savory flavor, completely free of any fishy taste. They make a perfect side dish for rice and a great snack for kids. Using plenty of garlic helps eliminate the anchovies’ natural fishiness and adds a wonderful depth of flavor.
Main Ingredients
- Anchovies (small, “janmyulchi”) 1 bowlful
- Minced garlic 1 heaping tsp

- Sesame seeds 1 tsp

Cooking Instructions
Step 1
Heat a pan over medium-low heat and add a generous amount of cooking oil. Add the minced garlic and sauté slowly until fragrant and lightly golden brown. Be careful not to burn the garlic.
Step 2
Place the anchovies in a sieve and shake gently to remove any dust or broken pieces. You’ll need about 1 bowlful.
Step 3
Once the garlic is lightly browned, add the prepared anchovies to the pan and stir-fry together. If the pan seems too dry during stir-frying, add another 1-2 teaspoons of cooking oil to prevent the anchovies from sticking or burning. Mix well to ensure even cooking. Consider the saltiness of your anchovies: if they are quite salty, you can skip the soy sauce. If they are mild, a little soy sauce can be added. Finally, stir in the oligosaccharide (4 tsp). Turn off the heat and toss the anchovies with the oligosaccharide using the residual heat. If you prefer a sweeter taste, feel free to add more oligosaccharide.
Step 4
Sprinkle in the sesame seeds (1 tsp) and mix well. Your delicious stir-fried anchovies are now ready! Using whole sesame seeds will add an extra layer of nutty flavor.
