Making a Spicy Seafood Pancake with Fresh Seafood and Crisp Vegetables
A Haemuljeon recipe made with plenty of spicy peppers and fresh seafood, fried to a perfect crisp. It pairs wonderfully with stews or makgeolli!
Main Ingredients- 1/2 squid
- 13 medium shrimp
- 1 crab stick
- 1 handful of chives
- 1-2 Cheongyang peppers (adjust spiciness)
- A little green onion
- 1/2 onion
Batter and Seasoning- 1 egg
- 3 Tbsp flour (pancake mix)
- 2 Tbsp cold water
- 1 tsp minced garlic (1 clove)
- A pinch of salt
- A pinch of pepper
- 1 egg
- 3 Tbsp flour (pancake mix)
- 2 Tbsp cold water
- 1 tsp minced garlic (1 clove)
- A pinch of salt
- A pinch of pepper
Cooking Instructions
Step 1
First, thoroughly clean and prepare the seafood and vegetables. Slice the squid into bite-sized pieces, peel and devein the shrimp. Shred the crab stick. Finely chop the chives, green onion, Cheongyang peppers, and onion. The size of the chopped vegetables can be adjusted to your preference, but it’s best to chop them uniformly so the pancake cooks evenly.
Step 2
In a large bowl, crack one egg and whisk it well, removing the chalaza. Add 3 tablespoons of flour, 2 tablespoons of cold water, 1 teaspoon of minced garlic, a pinch of salt, and a pinch of pepper. Mix until smooth and without lumps to create the batter. You might need to adjust the amount of water depending on the type and consistency of the flour used, ensuring it’s not too watery.
Step 3
Add all the prepared chopped seafood and vegetables to the batter bowl. Use a spoon or spatula to gently mix everything together until the ingredients are evenly coated with the batter. Mix just enough to combine.
Step 4
Heat a pan over medium-low heat and add a generous amount of cooking oil. Ladle about one spoonful of the batter onto the pan for each pancake, shaping them into rounds. Don’t overcrowd the pan, as this can make them stick together or be difficult to flip. Cook for about 3-4 minutes per side until golden brown and crispy. Be mindful of the heat; cooking on high heat can burn the outside before the inside is cooked through.
