Main Ingredients

  • 200g bean sprouts

Seasoning Ingredients

  • 1 Tbsp coarse sea salt (for blanching bean sprouts)
  • 1 tsp minced garlic
  • 1 tsp chopped green onion
  • 1 tsp gochugaru (Korean chili flakes)
  • 1 tsp sesame oil
  • 1 tsp toasted sesame seeds

Cooking Instructions

Step 1

Bring a pot of water to a rolling boil. Add 1 tablespoon of coarse sea salt and then add the thoroughly washed bean sprouts. Blanch them for about 30 seconds to 1 minute until they are still crisp. Be careful not to overcook them, as they can become mushy.

Step 1

Step 2

Immediately drain the blanched bean sprouts and rinse them under cold running water to stop the cooking process and cool them down. Then, submerge the bean sprouts in a bowl of ice-cold water for a short while to enhance their crispiness. Soaking them in ice water further ensures a refreshing and crunchy texture.

Step 2

Step 3

Once removed from the ice water, gently squeeze out as much excess water as possible from the bean sprouts using your hands. Properly draining the water is crucial to prevent the dish from becoming bland and to ensure the seasonings adhere well. In a mixing bowl, combine the squeezed bean sprouts with all the prepared seasoning ingredients: minced garlic, chopped green onion, gochugaru, sesame oil, and toasted sesame seeds. Gently mix everything together until well combined.

Step 4

While a simple seasoning of soy sauce or salt is delicious, adding gochugaru for a spicy kick truly awakens the palate. The bean sprouts, blanched and then refreshed in ice water, offer a delightful crunch with every bite. This refreshing texture makes every meal more enjoyable. This seasoned bean sprout dish is always a pleasure to eat and pairs wonderfully with various other dishes. It’s excellent served alongside dishes with chives or meat, creating a harmonious blend of flavors. Wishing all my neighbors a week filled with good things as we start this Monday!
