How to Make Delicious Garlic Scape Salad with Gochujang
Introducing a delightful garlic scape salad made with fresh, crunchy garlic scapes. It’s a perfect banchan (side dish) to awaken your appetite!
Main Ingredients- 300g fresh garlic scapes
Spicy-Sweet Dressing- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy Sauce (for savory depth)
- 1 Tbsp Oligodang (corn syrup) or honey (for gloss and sweetness)
- 1 Tbsp Plum Extract or syrup (adds a tangy sweetness and aroma)
- 1 tsp Sesame Oil (for a nutty fragrance)
- A pinch of Toasted Sesame Seeds (for garnish)

Cooking Instructions
Step 1
Prepare the garlic scapes by trimming any tough ends. Cut them into bite-sized pieces, about 5cm (2 inches) long. Rinse them thoroughly under cold water and drain well.
Step 2
Bring a pot of water to a rolling boil. Add about 1/2 teaspoon of salt. Carefully add the prepared garlic scapes to the boiling water and blanch them for just 1 minute. Be careful not to overcook, as they will become mushy. Immediately drain the garlic scapes and rinse them under cold running water to stop the cooking process and preserve their crispiness. Drain them thoroughly.
Step 3
In a mixing bowl, combine the gochujang, soy sauce, oligodang (or honey), plum extract, and sesame oil. Whisk everything together until you have a smooth, well-blended dressing. Taste and adjust seasonings if needed.
Step 4
Add the blanched and drained garlic scapes to the bowl with the dressing. Gently toss the garlic scapes using a spoon or your hands (wearing gloves is recommended) to ensure they are evenly coated with the dressing. Mix carefully to avoid breaking the scapes.
Step 5
