  • Pickled radish 1 cup (using a paper cup as a measure)
  • Scallion 1 stalk

Seasoning

  • Minced garlic 1/4 Tbsp
  • Gochugaru (Korean chili flakes) 1/2 Tbsp
  • Sesame oil 1 Tbsp

Cooking Instructions

If the saltiness of the pickled radish is a concern, you can soak it in water for about 10 minutes to reduce the saltiness. I used whole pickled radishes and soaked them for 5 to 10 minutes. This step is optional if you prefer the original saltiness.

After soaking, gently pat the pickled radish dry with a paper towel to remove excess moisture from the surface. Taste a piece; if it’s still too sour or too salty, soak it in water for a little longer.

If you used whole pickled radishes, cut them into bite-sized pieces (about 1-2 cm). Cutting them thinly helps the seasoning penetrate better.

Now, let’s season the pickled radish. Add 1/2 Tbsp of gochugaru, 1/4 Tbsp of minced garlic, and 1 Tbsp of sesame oil to the dried, cut radish. While minced garlic is optional, a small amount adds a wonderful depth of flavor.

Finally, finely chop the scallion for color and add it to the mix. If you don’t have scallions, the white part of a regular green onion, thinly sliced, can be a good substitute. Scallions are also optional but add a pleasant flavor and visual appeal. Gently toss everything together with your hands until well combined. Your delicious pickled radish salad is ready!
