Seasoning Ingredients
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Saeujeot (fermented salted shrimp), finely minced
- 0.5 Tbsp Minced Garlic
- 2 tsp Grated Ginger
- 1 Tbsp Rice Syrup (or corn syrup)
- 1.5 Tbsp Fish Sauce (anchovy or shrimp)
- 1 Tbsp Plum Extract (or plum syrup)
- 0.5 Tbsp Brown Sugar
- A pinch of Toasted Sesame Seeds (optional)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Saeujeot (fermented salted shrimp), finely minced
- 0.5 Tbsp Minced Garlic
- 2 tsp Grated Ginger
- 1 Tbsp Rice Syrup (or corn syrup)
- 1.5 Tbsp Fish Sauce (anchovy or shrimp)
- 1 Tbsp Plum Extract (or plum syrup)
- 0.5 Tbsp Brown Sugar
- A pinch of Toasted Sesame Seeds (optional)
Cooking Instructions
Step 1
Wash one medium apple thoroughly and peel it. Then, cut it into bite-sized cubes, about 1.5 to 2 cm in size, suitable for kkakdugi. Cutting them too small might reduce the satisfying chewiness.
Step 2
Peel one medium onion and dice it into similar-sized cubes, approximately 1.5 to 2 cm, matching the apple pieces. If you prefer a milder onion flavor, you can soak the diced onion in cold water for a few minutes before using.
Step 3
In a bowl, combine all the seasoning ingredients for the kkakdugi and mix them well to create a delicious seasoning paste. Add gochugaru, finely minced saeujeot, minced garlic, grated ginger, rice syrup, fish sauce, plum extract, brown sugar, and toasted sesame seeds. Stir thoroughly to ensure all ingredients are evenly distributed and the flavors meld together.
Step 4
Transfer the diced apple and onion into a large mixing bowl.
Step 5
Pour the prepared kkakdugi seasoning paste evenly over the apple and onion in the bowl.
Step 6
Now, gently mix everything together using your hands or a spatula until the seasoning coats the apple and onion evenly. Be careful not to mash the apple pieces; mix gently. Once all ingredients are well combined and coated with the seasoning, your delicious Apple Kkakdugi is ready! It’s wonderful to eat immediately, or you can chill it in the refrigerator for a refreshing treat.
