Ingredients

  • 1/4 head of cabbage (approx. 450g)
  • 5-6 stalks of green onion
  • 1 red chili pepper

Seasoning Ingredients

  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp anchovy sauce (myeolchi aekjeot)
  • 1 Tbsp salted shrimp (saeujeot), minced
  • 1 Tbsp plum extract (maesil aek)
  • 1 tsp sugar
  • 1 Tbsp minced red chili pepper (optional, for color)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, wash the cabbage thoroughly under running water. Remove the core and slice it into bite-sized pieces, about 2-3cm wide. Slice it relatively thickly to maintain a crisp texture, as thinly sliced cabbage can become mushy.

Remove the stem from the red chili pepper, wash it, and then finely mince it using a mortar and pestle or a knife. Adding minced chili pepper will help the seasoning penetrate better and give the salad a beautiful color.

In a bowl, combine the sliced cabbage and the green onions (washed and cut into 3-4cm lengths). First, add 3 Tbsp of gochugaru and gently toss with your hands to distribute the chili flakes evenly. This initial step helps to draw out the cabbage’s natural moisture, resulting in an even crispier texture.

Now, add all the seasoning ingredients (2 Tbsp anchovy sauce, 1 Tbsp minced salted shrimp, 1 Tbsp plum extract, 1 tsp sugar, 1 Tbsp minced garlic, and 1 Tbsp minced red chili pepper) to the bowl. After adding the seasonings, continue to gently mix everything together with your hands, being careful not to mash the cabbage, until all ingredients are well combined.

Finally, taste the salad to check the seasoning. If it’s not salty enough, add a tiny bit more salt or anchovy sauce to adjust the flavor to your preference.
