Now, it’s time to peel the Kohlrabi. The skin can be quite thick, so it’s best to peel it generously. After peeling, cut the Kohlrabi in half. This will make it much easier and more stable to julienne finely.

Julienne the Kohlrabi into thin strips, similar to how you would prepare radish for Mu Saengchae. Once julienned, add 1 teaspoon of salt and mix gently. Let it sit for 10 minutes to allow the Kohlrabi to salt-cure, which will enhance its crispiness.

After 10 minutes, gently squeeze out the excess water from the salted Kohlrabi. Be careful not to squeeze too hard, as we want to retain some crispness. If you prefer, you can simply drain the released water instead of squeezing. If you feel it’s too salty, you can rinse it briefly under cold water, drain thoroughly, and then proceed with seasoning.
