Ingredients

  • 7 Napa cabbage leaves (use fresh, tender leaves)
  • 1/3 carrot (julienned very thinly)
  • 2 stalks green onion (chopped)
  • 1 cup all-purpose flour (for Korean pancakes)
  • 1 cup cold water
  • Cooking oil (generous amount)
  • Dipping sauce (for serving: 2 Tbsp soy sauce, 1 Tbsp vinegar, 0.5 Tbsp sugar, pinch of sesame seeds)

Cooking Instructions

Step 1

Wash the 7 Napa cabbage leaves thoroughly to remove any dirt or debris.

Step 1

Step 2

Make a few shallow cuts at the thickest part of the cabbage leaf stem. Then, gently pound the stem with the back of a knife to flatten it. This helps the leaves lie flat in the pan for even cooking.

Step 2

Step 3

In a bowl, combine 1 cup of flour and 1 cup of cold water. Mix them just until the flour is incorporated and no dry spots remain. Do not overmix, as this can develop gluten and result in a chewy, less crispy pancake.

Step 3

Step 4

Julienne the carrot as thinly as possible. Chop the green onions. These ingredients will add color and flavor.

Step 4

Step 5

Brush the prepared batter thinly and evenly onto both sides of each cabbage leaf. Avoid applying too thick a layer, as it can make the pancake feel greasy.

Step 5

Step 6

Heat a frying pan over medium heat and add a generous amount of cooking oil. Place the battered cabbage leaves onto the hot pan. Then, artfully arrange the julienned carrots and chopped green onions on top.

Step 6

Step 7

Once the underside of the pancake is golden brown and the batter appears translucent, carefully flip it over. Cook the other side until equally golden and crispy.

Step 7

Step 8

Transfer the cooked pancakes to a plate and cut them into bite-sized pieces with scissors. Prepare a simple dipping sauce by mixing 2 Tbsp soy sauce, 1 Tbsp vinegar, 0.5 Tbsp sugar, and a pinch of sesame seeds. Serve alongside the pancakes.

Step 8

Step 9

Your crispy outside, tender inside Napa cabbage pancakes are ready! The natural sweetness of the cabbage juice enhances the flavor beautifully.

Step 9

Step 10

Dip a piece into the sauce and take a bite – the delightful sweetness of the cabbage and the satisfying crunch will bring a smile to your face. If you’re feeling peckish right now, why not quickly whip up these delicious Napa cabbage pancakes and enjoy?
