For the red bean paste, I tried a canned version this year. While it’s quite sweet, it comes in convenient small portions, making it easy to use. Adjust the amount to your personal preference.

Start by creating a base layer of puffed rice in your serving bowl or glass. I used a mix of rice and barley puffed rice; personally, I found the barley puffed rice to have a richer, nuttier flavor. The crispiness of the puffed rice will add a wonderful textural contrast to the ice cream.

Step 4

Next, carefully spoon your desired red bean paste over the puffed rice. Be mindful when scooping the ice cream – if you try to make it too perfectly round, it might melt and slide off. Aim for a size that sits well on top. (Oops, I scooped the ice cream a bit too round for the photo, and it started to drip! ㅠㅠ)

Step 5

Finally, generously sprinkle the toasted soybean powder over the ice cream for a delightful nutty finish! It’s best to add the soybean powder just before serving to keep the puffed rice crisp. Even with the slight drip, this assembly creates a beautifully imperfect and delicious puffed rice ice cream. Enjoy your delightful creation right away!
