I plan to share my homemade fried chicken recipe soon, but first, I wanted to introduce the perfect accompaniment: homemade chicken pickles! These pickles cut through the richness of fried dishes and their satisfying crunch makes them impossible to resist. They’re incredibly simple to make – just prepare the radish and let it soak in a sweet and tangy vinegar brine. Ready to make them together?

- 1 medium-sized daikon radish
Brine Ingredients
- 1 cup water (200ml)
- 1 cup vinegar (200ml)
- 1 cup sugar (200ml)
- 1/2 Tbsp salt
- 2 pieces kombu (approx. 5cm x 5cm)

Cooking Instructions
Step 1
1. Let’s start by making the sweet and tangy brine. In a pot, combine 1 cup water, 1 cup vinegar, 1 cup sugar, 1/2 tablespoon salt, and 2 pieces of kombu. Bring it to a gentle boil, then turn off the heat and let it cool at room temperature for about 30 minutes. Remove the kombu before proceeding.

2. While the brine is cooling, we’ll prepare the radish. First, wash the radish and peel its skin using a peeler. Then, cut it into bite-sized cubes, about 1 to 1.5 cm in size.

3. Place the cut radish into a spacious airtight container or food storage box. Pour the cooled brine over the radish, ensuring it’s fully submerged. Seal the container tightly and refrigerate for at least half a day (over 6 hours) to allow it to pickle and develop flavor. The longer it sits, the deeper the taste.
