Main Ingredients

  • 1 cup radish (approx. 200g)
  • A little beetroot (for color, optional)

Sweet and Sour Pickle Dressing

  • 6 Tbsp vinegar
  • 4 Tbsp sugar
  • 1/2 Tbsp salt
  • 2 Tbsp water

Cooking Instructions

Step 1

First, wash the radish thoroughly, peel it, and then julienne it into thin, long strips. If using beetroot, julienne it to a similar thickness. Beetroot adds a beautiful color to the pickles, but you can omit it as it doesn’t significantly alter the taste.

Step 1

Step 2

In a bowl, combine all the dressing ingredients: 6 tablespoons of vinegar, 4 tablespoons of sugar, 1/2 tablespoon of salt, and 2 tablespoons of water. Stir well until the sugar and salt are completely dissolved to make the pickle dressing.

Step 2

Step 3

Add the julienned radish and beetroot (if using) to the bowl with the dressing. Gently toss and mix with your hands to ensure the dressing evenly coats the radish. Be careful not to mash the radish by mixing too vigorously.

Step 3

Step 4

After mixing, let it sit for a moment. The beetroot will release its beautiful color, giving the pickles an appetizing hue. Transfer the prepared pickles into sterilized glass jars, packing them neatly. Store them in the refrigerator to chill. For the best flavor, let them chill for at least 30 minutes to allow the flavors to meld.

Step 4

Step 5

These easily made sweet and sour radish pickles are the perfect accompaniment to rich, greasy dishes like grilled meats. Their crisp texture and refreshing taste will cleanse your palate. They make a fantastic side dish, so be sure to try making them!
