A Healthy Stir-fry Featuring Aromatic Shiitake Mushrooms and Crisp Asparagus

Main Ingredients- 1 bunch Asparagus
- 4-5 Dried Shiitake Mushrooms (or 3-4 Fresh Shiitake Mushrooms)
- 5-6 cloves Garlic
Seasoning- 1.5 Tbsp Oyster Sauce
- 0.5 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp Sesame Oil
- A pinch of Sesame Seeds
- 1.5 Tbsp Oyster Sauce

Cooking Instructions
Step 1
First, prepare your vegetables. For the asparagus, trim off the tough woody ends. Blanch them in boiling water with a pinch of salt for 30 seconds to 1 minute, then immediately shock them in cold water. Drain well and cut into 4-5 cm lengths. If using dried shiitake mushrooms, rehydrate them by soaking in lukewarm water for at least 30 minutes. Squeeze out excess water, remove the tough stems, and slice them thinly (about 0.5 cm thick). If using fresh shiitake mushrooms, simply wipe them clean, remove the stems, and slice thinly. Peel and thinly slice the garlic cloves.
Step 2
Heat 2 tablespoons of cooking oil in a wok or large skillet over medium heat. Add the sliced garlic and stir-fry until fragrant and lightly golden brown. Be careful not to burn the garlic. Once the garlic is fragrant, add the rehydrated shiitake mushrooms and stir-fry for 1-2 minutes to release their earthy flavor.
Step 3
When the mushrooms are slightly softened, add the prepared asparagus to the pan. Stir-fry together for about 1 minute, ensuring the asparagus remains crisp and vibrant. Avoid overcooking the asparagus to maintain its pleasant crunch. Pour in 1.5 tablespoons of oyster sauce and stir-fry quickly to evenly coat all the ingredients.
Step 4
To add a touch of spice, sprinkle in 0.5 tablespoon of gochugaru (Korean chili flakes) and mix well. Adjust the amount of gochugaru according to your preference for heat. Remove the pan from the heat. Drizzle in 1 tablespoon of sesame oil and sprinkle with a pinch of sesame seeds. Toss gently to combine everything.
