- 1 Tbsp Doenjang (fermented soybean paste)
- 1 Tbsp peanut butter (for added creaminess)
- 1/2 Tbsp Gochugaru (red pepper flakes) (adjust to taste)
- 1 Tbsp corn syrup or mulyeot
- 1 Tbsp cider or clear soda (for a subtle sweetness and shine)
- A pinch of sesame seeds (for nutty flavor)
Cooking Instructions
Step 1
Begin by thoroughly washing the asparagus. Snap off the tough, woody ends of the spears. Then, using a vegetable peeler, carefully shave off the outer layer of the lower part of the asparagus stalks. This step helps to tenderize the asparagus, making it more pleasant to eat.
Step 2
Once peeled, cut the asparagus spears into bite-sized pieces, about 2cm (approximately 0.8 inches) long. Aim for a thickness that will retain a pleasant crunch after cooking; cutting them too thinly might result in a mushy texture.
Step 3
Lay out the prepared pork intestines. Now, it’s time to thread the cut asparagus pieces through the intestines. You can weave them in and out, or simply insert them between folds of the intestine to create a skewer-like appearance. This combination aims for a balance between the chewy texture of the intestine and the crispness of the asparagus.
Step 4
Arrange the asparagus-wrapped intestines in a single layer in your air fryer basket, ensuring they don’t overlap too much. Cook at 180°C (356°F) for approximately 10 minutes. For even cooking and a crispier finish, it’s a good idea to flip them halfway through. Cooking times may vary slightly depending on the size of the intestines and your air fryer model.
Step 5
While the intestines are cooking, prepare the dipping sauce. In a small bowl, combine the doenjang, peanut butter, gochugaru, corn syrup (or mulyeot), cider (or clear soda), and sesame seeds. Whisk everything together until well combined. This sauce can be used for dipping the cooked intestines or drizzled over them. Serve the air-fried asparagus intestines hot with the prepared sauce for a delicious meal!
