Main Ingredients- 1 bag fresh bean sprouts (approx. 300g)
- 5-6 strips bacon
- 1/2 medium onion

Step 1
Start by preparing the bean sprouts. Rinse them thoroughly under running water. Remove any dirt or imperfect parts. It’s crucial to drain them well using a colander; this prevents excess water from making the stir-fry soggy and helps maintain their crispness. This method offers a delightful texture, different from how they’re usually prepared.
Step 2
Heat a pan over medium-low heat. Add a very small amount of cooking oil, or rely on the fat rendered from the bacon. Sauté the thinly sliced half onion and minced garlic for about 1/2 tablespoon. Cook until the onion becomes translucent and soft. This process will bring out the natural sweetness of the onion.
Step 3
Once the onion is tender, add the bacon, cut into bite-sized pieces. Stir-fry everything together. A helpful tip: briefly blanching the bacon in hot water before frying can remove excess grease, making the dish lighter. Continue to cook until the bacon is nicely browned.
Step 4
Now, it’s time to add the bean sprouts for that signature crunch! Turn the heat up to high. Stir-frying on high heat for a short time is key to keeping the bean sprouts crisp. Add 1/2 tablespoon of oyster sauce and toss everything quickly to coat evenly. Taste and adjust the seasoning with a pinch of salt if needed. Garnish with chopped green onions for a fresh finish and appealing look.
