  • Cooked Rice 2 bowls
  • Green Onion 1 stalk
  • Cooking Oil, a little
  • Sugar 1/2 Tbsp (to balance kimchi’s sourness)
  • Minced Garlic 1 Tbsp
  • Soy Sauce 2 Tbsp

Cooking Instructions

First, finely chop the green onion. Slice the white part of the green onion into small, thin pieces. This step is crucial for creating aromatic green onion oil.

Next, cut the bacon into bite-sized pieces, about 1-1.5 cm thick. This size ensures you get a good bite of savory bacon in every spoonful.

Prepare the seasoning sauce. In a small bowl, mix together 1/2 Tbsp sugar, 1 Tbsp minced garlic, and 2 Tbsp soy sauce. If your kimchi is very sour, you can add a little more sugar.

Cut the kimchi into bite-sized pieces. This will make it easier to stir-fry and eat. Aim for pieces similar in size to the bacon.

Heat a frying pan over medium-high heat. Add a little cooking oil and the chopped green onions. Stir-fry the green onions over medium-low heat until fragrant and the oil is infused with their aroma. This is your fragrant ‘green onion oil’.

Once the green onion oil is fragrant, add the cut bacon and kimchi to the pan. Stir-fry them together for about 3-4 minutes, allowing the bacon to render its fat and coat the kimchi.

When the kimchi starts to soften slightly, pour the prepared seasoning sauce around the edges of the pan. This allows the sauce to caramelize slightly, adding a delicious ‘wok hei’ (breath of the wok) flavor. Quickly mix everything together thoroughly.

After incorporating the sauce, add 1 Tbsp of gochugaru (Korean chili flakes) if desired, and stir-fry once more to distribute the spice evenly.
