  • 2 strips bacon
  • 2 scallions (green onions)

First, heat a skillet over medium heat and add the 2 strips of bacon. Cook them on both sides until golden brown and slightly crispy. Frying them slightly in their own rendered fat will make them even more delicious.

Once the bacon is cooked, remove it to a separate plate temporarily. Wash the 2 scallions thoroughly and cut them into approximately 5cm (2-inch) lengths. Cutting them not too thinly will provide a pleasant texture when cooked.

Using the rendered bacon fat remaining in the skillet, add the cut scallions. Toss them in the bacon fat to coat evenly. Cook over medium-low heat gently, ensuring the scallions don’t burn but become tender inside.

While cooking, check the thickness of the scallions. If they are on the thicker side, it’s best to cook them a little longer to ensure they become thoroughly tender all the way through. They are done when a chopstick can easily pierce them.
