Crispy Bacon Kimchi Nurungbap (Scorched Rice)

An adapted version of the viral ‘Kimchi Rice Blooms’ recipe by Chef Baek Jong-won from the popular show ‘Kang’s Kitchen 2’! Try making Bacon Kimchi Nurungbap for a delightful meal that’s sure to be a hit. It combines the savory flavor of bacon, the spicy tang of kimchi, and the satisfying crunch of nurungbap (scorched rice).

Rice and Fillings

  • 1 bowl cooked rice
  • 1 bowl ripe kimchi (cubed kimchi recommended)
  • 1/2 bowl dried radish strips (mu-mallaengi)
  • 1 fresh egg
  • 2 strips thick-cut bacon
  • 1 stalk green onion

Special Sauce

  • 6 Tbsp tonkatsu sauce
  • 2 Tbsp ketchup
  • 1 Tbsp oyster sauce
  • 2 Tbsp oligodang (corn syrup)
  • 50ml water

A key ingredient for delicious kimchi fried rice is green onion! Finely chop the green onion to add a fragrant aroma. Using more will make it even tastier.

Kimchi is an essential part of Korean cuisine! For this recipe, we recommend using well-fermented cubed kimchi for its refreshing taste and crisp texture. You can also use well-ripened napa cabbage kimchi according to your preference.

Finely dice the bacon and kimchi to enhance the flavor. Also, cut the dried radish strips into bite-sized pieces for a delightful chewy texture. (It’s recommended to soak the dried radish strips in water beforehand to soften them.)

Heat a pan and sauté the green onions until fragrant to create green onion oil. Once the aromatic oil is released, add the prepared bacon, dried radish strips, and diced kimchi. Stir-fry quickly over high heat. Add 1 ladle of kimchi juice for extra flavor, 1 tablespoon of sugar to adjust sweetness, and a drizzle of sesame oil for a nutty aroma.

Add 1 bowl of warm cooked rice to the stir-fried ingredients. Use a spatula to break up any clumps and stir-fry until the rice is fluffy and well-coated. Cook until it has a nice sheen, ensuring all ingredients are evenly distributed.

While the fried rice cools, let’s make the delicious sauce! In a small saucepan, combine 6 Tbsp tonkatsu sauce, 2 Tbsp ketchup, 1 Tbsp oyster sauce, 2 Tbsp oligodang, and 50ml water. Simmer over low heat until thickened. Meanwhile, beat the egg to prepare the egg wash.

Add a generous amount of oil to a heated pan. Place the formed fried rice patty directly onto the pan. Once one side is golden brown and starting to crisp, carefully flip it over and press down firmly with a spatula, shaping it like a flattened ho-tteok (Korean pancake). To prevent it from falling apart, pour some of the beaten egg wash around the edges of the rice patty to help it bind.

Flip and cook both sides until the rice becomes evenly golden brown and crispy, forming a nurungbap texture. Be mindful of the heat to prevent burning, and cook slowly over medium-low heat.
