Potato pancakes are always a delightful and satisfying dish! Unlike the traditional grated potato pancake, this version, made with thinly julienned potatoes, offers a distinct crispy exterior and a tender interior. It’s a fantastic snack for kids and an excellent accompaniment to drinks for adults. Let’s make this delicious bacon potato pancake with a golden ratio!
Ingredients- 6 potatoes (small size)
- 2 strips of bacon
- 3 Tbsp pancake mix (buchim garu)
- 1 tsp salt
- Generous amount of black pepper
- Generous amount of cooking oil
Cooking Instructions
Step 1
First, peel the potatoes. The recipe calls for 6 small potatoes, which will yield one pancake approximately the size of a 28cm frying pan.
 
Step 2
Julienne the potatoes as thinly as possible. Using a mandoline slicer is convenient, but you can also do this by hand with a knife. The thinner you slice the potatoes, the crispier the pancake will be when cooked!
 
Step 3
Rinse the julienned potatoes lightly under running water to wash off some of the starch. Then, squeeze out as much water as possible with your hands and place them in a bowl. Properly draining the water is crucial for a crispy pancake.
 
Step 4
Thinly julienne the 2 strips of bacon, just like the potatoes.
 
Step 5
To the bowl of potatoes, add 3 tablespoons of pancake mix, 1 teaspoon of salt, and a generous amount of black pepper. Add the julienned bacon and get ready to mix everything together.
 
Step 6
Mix all the ingredients thoroughly in the bowl until well combined. Ensure the potato shreds, bacon, and seasonings are evenly distributed.
 
Step 7
Heat a generous amount of cooking oil in a frying pan over medium heat. Once the oil is hot, pour in the batter and spread it thinly and evenly across the pan. Avoid making it too thick, as this will affect the cooking time and crispiness.

Cook over medium heat, flipping occasionally, until both sides are golden brown and crispy. Ensure the potatoes are cooked through and the pancake is nicely browned. If the pan seems dry during cooking, add a bit more oil – using enough oil is key to achieving a perfect crispy texture.
