Bamboo shoots are delicious no matter how you cook them! This is a super simple stir-fry dish that combines their natural goodness with a rich, buttery, and garlicky flavor. It’s incredibly addictive and perfect with a bowl of rice.

Ingredients
  • 1 handful of bamboo shoots (fresh)
  • 1 piece of butter (approx. 10g)
  • Pinch of salt
  • 1 Tbsp minced garlic (approx. 10g)

Cooking Instructions

Step 1

If using fresh bamboo shoots, boil them in water with 1 tablespoon of salt for about 30 minutes. After boiling, soak them in cold water for at least an hour to remove any bitterness. This process will make them more tender and delicious. (If using canned or pre-prepared bamboo shoots, simply rinse them under water.)

Step 2

In a heated pan, add 1 piece of butter and 1 tablespoon of minced garlic. Stir-fry over medium-low heat to release the aromas. The garlic will start to become fragrant as the butter melts.

Step 3

Be careful not to burn the garlic. Sauté it until it turns a light golden brown and a rich, toasty aroma emerges. Cooking the garlic slowly and thoroughly is key to developing its deep flavor and natural sweetness.

Step 4

Once the garlic is nicely browned, add the prepared bamboo shoots to the pan and stir-fry them together. Avoid overcooking to maintain the bamboo shoots’ satisfying crispiness.

Step 5

Finally, add a pinch of salt to season. Adjust the saltiness to your preference, tasting as you go to ensure it’s not too salty.

Step 6

Once all the ingredients are well combined, turn off the heat and transfer the finished bamboo shoot stir-fry to a serving dish. Although simple, this dish becomes incredibly rich and delicious with the added flavors of butter and garlic. It makes for a fantastic side dish to enjoy with a warm bowl of rice!
