Crispy Bean Sprout and Beef Gochujang Fried Rice

Ingredients

  • 200g minced beef
  • 1 Tbsp cooking wine (mirin)
  • 2 Tbsp cooking oil
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 1 Tbsp minced garlic
  • Pinch of black pepper
  • 2 handfuls bean sprouts (approx. 200g)
  • 1 cup kimchi (chopped)
  • A little toasted sesame seeds

Cooking Instructions

Step 1

First, heat 1 Tbsp of cooking oil in a pan over medium heat. Add the minced beef and stir-fry until it loses its pink color. While stir-frying the beef, add 1 Tbsp of cooking wine, 1 tsp of sugar, 1 tsp of soy sauce, and a pinch of black pepper. Stir-frying these together will help remove any gamey smell and enhance the umami flavor.

Once the beef is cooked, add 1 Tbsp of minced garlic and 1 Tbsp of gochujang. Stir-fry quickly over high heat. Be careful not to burn the gochujang. Stir until the beef and gochujang are well combined, then set aside in a separate bowl.

Wipe the pan clean, add the remaining 1 Tbsp of cooking oil, and stir-fry the chopped kimchi over medium heat until tender. Stir-frying the kimchi well will bring out its savory flavor and texture in the fried rice.

When the kimchi is sufficiently stir-fried, add the 2 handfuls of washed and drained bean sprouts and stir-fry together. It’s important to maintain the crunchy texture of the bean sprouts, so avoid overcooking. Stir-fry just until the bean sprouts are slightly wilted.

Once the bean sprouts are lightly cooked, add the pre-stir-fried beef and gochujang mixture, along with one bowl of warm cooked rice (or for 2 servings). Stir-fry everything together until well combined. Use a spatula to gently break up any clumps of rice while stir-frying for evenly cooked grains.
