First, rinse the bean sprouts thoroughly under running water. Add 1/2 teaspoon of salt to boiling water. Once the water starts boiling again, add the prepared bean sprouts. Blanch them for a very short period, specifically between 1 to 1.5 minutes, to maintain their crispiness. Overcooking will make them mushy, so be sure to watch the time.

Immediately after blanching, rinse the bean sprouts in cold water to cool them down (a ‘cold shower’). Then, using both hands, squeeze out as much water as possible. If there’s remaining water, the salad will be bland and less flavorful, so squeezing out the water is a crucial step.

Place the squeezed bean sprouts in a bowl and add the seasoning ingredients. Mix in 2 tsp of soy sauce (or 1 tsp of regular soy sauce), 1/2 tsp of salt, 2 tsp of sesame oil, and a little chopped green onion. Gently toss the mixture with your hands until the seasoning is evenly distributed. Make sure to loosen any clumps while mixing so the seasoning is well-balanced.
