Today, I made a simple yet delicious soybean paste salad using fresh bok choy I found at the supermarket. I don’t often see bok choy at my local market, so I always check the larger supermarkets when I visit. Today, I decided to take an evening walk and happened to stop by the market, where I discovered some fresh-looking bok choy in the discount section. Although I was a little worried if it was really fresh, the craving for bok choy salad was strong, so I bought it right away. As a result, I’ve created a truly delicious side dish with a wonderful balance of crispiness and savory soybean paste dressing! Ingredients- Bok Choy: 400g
- Doenjang (Korean Soybean Paste): 2 Tbsp
- Gochujang (Korean Chili Paste): 1/2 Tbsp
- Sesame Oil: 1 Tbsp
- Plum Extract: 1/2 Tbsp
- Minced Garlic: 1 Tbsp
- Toasted Sesame Seeds: 1 Tbsp
Cooking Instructions
Step 1
First, trim the hard base of the bok choy with a knife and separate the leaves. This preparation step helps the seasoning to penetrate better and makes it easier to eat.
Step 2
Bring about 1 liter of water to a rolling boil in a deep pot. Once the water is boiling, dissolve 1 Tbsp of salt. Add the bok choy to the salted boiling water and blanch for about 30 seconds. Be careful not to over-blanch, as this will reduce its crispiness.
Step 3
Immediately remove the blanched bok choy from the water and rinse it under cold running water to cool it down. Rinsing in cold water brightens the color and maintains its crisp texture. Gently squeeze out excess water with your hands, then drain thoroughly in a colander. Removing excess water is crucial for the seasoning to adhere properly without becoming watery.
Step 4
In a large bowl, combine 2 Tbsp of doenjang, 1/2 Tbsp of gochujang, 1 Tbsp of sesame oil, 1/2 Tbsp of plum extract, 1 Tbsp of minced garlic, and 1 Tbsp of toasted sesame seeds.
